I’m slowly finding my way back to all the things I was doing before the new baby arrived. It’s not easy. There are days when I pat myself on the back for showering. Breastfeeding has me craving a lot of sugar and simple carbs, which I do partake of almost daily, but I’m still making sure I get my green veggies in as often as I can.

One way I do this is with a simple blended green soup. I was first inspired to make this savory “smoothie” when I started out down the path of raw food 7+ years ago and was glued to Dara Dubinet’s YouTube channel every night. She inspired many of my recipes, honestly, but this one in particular has stuck around, and I’ve even got my mom making it on the regular. It’s super simple and quick to make, and it’ll help you get lots of nutrients into your body without much effort. Aside from juicing, it’s one of the easiest and best ways to get your greens.

Here’s a breakdown of just a few of the benefits of this soup:

Cucumber- Contains vitamin C and silica, as well as high amounts of water, which are all great for healthy skin.

Avocado- Rich in vitamins, minerals, and omega-3 fatty acids.

Raw garlic- Contains compounds with anti-microbial/bacterial/viral benefits which can help keep you from getting sick. It may also help reduce cholesterol and blood pressure.

This soup is great for everyone. It’s delicious, creamy, and perfect for any time of day. Whether vegan, vegetarian, omnivore, paleo, or keto, this recipe fits any dietary guidelines.

Emerald Goddess Soup

Makes 1 serving

1/2 cucumber, chopped

1/2 avocado

1-2 cups spinach

1/4 cup cilantro

1-2 tbsp chopped onion (or 1/2 tsp powder)

2 cloves garlic (or 1/2 tsp powder)

1/2-3/4 cup water (depending on preference)

juice of 1 lime

Sea salt and cayenne pepper to taste

To garnish: Olive oil, sliced avocado, cilantro, pepitas, coarse sea salt.

Add all ingredients to blender and blend until smooth. It’s really just that simple.
